In our household we eat a lot of sweet potatoes. And when you eat a lot of sweet potatoes, you will inevitably have many pounds of leftover sweet potatoes. This is the case for use especially when we bake a large batch of say 3 to 5 pounds of sweet potatoes in the oven for eating throughout the week.
When the week is coming to the end we will sometimes have a pound or two of cooked sweet potatoes that need to be used up in the refrigerator. And this recipe is one of our favorite ways to use up these sweet potatoes before they go bad.
Of course, you could use freshly cooked sweet potatoes for this recipe, and for that you will want to initially bake the sweet potatoes for 45 to 50 minutes at 400 degrees Fahrenheit.
Air fryer sweet potato bites are the perfect recipe if you are looking for a healthy snack that adds some crunch!
- 1 to 3 pounds sweet potatoes (cooked)
- 1 to 2 tablespoons maple syrup
- 1 tablespoon water
- 1 teaspoon cinnamon
Cut the cooked sweet potatoes into bite-sized cubes that are around 1/2 inches to 1 inch thick.
Toss the sweet potato cubes with the maple syrup and water until all they are evenly coated, then toss in the cinnamon so that each cube is nicely coated with syrup and cinnamon.
Air fry the sweet potato bites at 400 degrees Fahrenheit for 20 minutes, flipping or stirring halfway through. You may need to air fry them for an additional 5 to 10 minutes depending on how hot your air fryer cooks.
Allow the crispy sweet potato bites to cool for 10 minutes before removing them from the air fryer basket and serving.
