As Fall has come and the weather is cooling down, one of my favorite foods to prepare is vegan mac n’ cheese. Now there are a lot of vegan options available, but I like to make a healthy version without a long list of ingredients or added fats.
This recipe is one I love to make in advance and have ready in the fridge for a quick meal with some rice or noodles. You can also use this sauce to go in a baked mac n’ cheese recipe. I love the added smoky flavor of this recipe, but if you would like to omit it you can and the flavor is still outstanding. This is a favorite recipe of mine to make for when we are having guests over to surprise them with a completely healthy and delicious vegan version of macaroni and cheese.
I like to keep my sauce nice and thick for this recipe, but if you like yours to be thinner you can always add in some more water to achieve your desired consistency.

INGREDIENTS
- 2 cooked sweet potatoes (baked, steamed, or boiled)
- 1 1/2 cups vegetable broth or water
- 1/4 cup nutritional yeast
- 1 tbs soy sauce
- 1 tsp sage
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp liquid smoke
- 1/4 tsp ground black pepper
INSTRUCTIONS
Blend all of the ingredients together for 3 to 5 minutes or until your “cheesy” sauce is a silky smooth and creamy consistency.
