Healthy Breakfast From Blueberry

These delicious Blueberry Oatmeal Breakfast Bars make a quick on-the-go breakfast or snack option that are healthy, kid-friendly and super easy to throw together!

Bridgette and I woke up bright and early to get started on breakfast this morning. We usually make cinnamon and raisin breakfast squares but yesterday Dr Miller asked if we could make a berry filled version. Luckily we had a bag of wild blueberries in our freezer to make her request a reality.

I prefer using the smaller, wild type blueberries because they easily mix together in recipes. While our breakfast squares were baking, Bridgette and I opened up the greenhouse and watered all of our seedlings. The extended forecast is looking like we will have our summer transplants in the ground very soon.

Blueberry Breakfast Squares:

  • 1 cup rolled oats
  • 1 cup WW or GF flour
  • 1 cup plant-based milk
  • 1/2 cup blueberries (fresh or frozen)
  • 1/4 cup maple syrup
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon baking soda

1. Mix all the ingredients together in a large bowl. Pour the mixture onto a parchment lined baking pan. Spread the mixture out evenly to a thickness of 1/4-1/2 inch thick.

2. Bake at 375 F for 12-15 minutes. Remove from the oven and allow to cool for 15 minutes before slicing into bars and servings.
